Harvest happens in the early morning, mid-February, to preserve fresh fruit and freshness. Fermentation in stainless steel at 14-16 °C. 90% of the wine undergoes malolactic fermentation and rests a little further. Again, to preserve fresh fruit and liveliness, no wood is used for ripening.
