Pronounced continental climate that is highly dependent on precipitation during the year. Most precipitation falls mainly in the intermediate seasons. Due to the relatively high altitude, temperatures can also drop sharply, sometimes below freezing. The years with regular rainfall all year round are usually the best.

Old vineyard 800m above sea level, which is cultivated according to the highest requirements. (6000kg/ha) Soil consisting of sand and boulders. Small boulders in the top layer. Very poor in organic matter.

The grapes are picked by hand in the cool of the early morning to preserve the fresh character of the wine. Cold maceration for 5 hours at 10°C. Gentle pressing and fermentation under controlled temperature. The wine then matures on its lees for at least 4 months.
